An Appalachian Spring Tradition is frying up dandelions!


Wanna make fried dandelions? It's easy and oh-so delicious!

First go out and gather the top yellow part of the dandelion. Gather a LOT of them.
Now put into a bowl and fill with cold water.
Add 2 teaspoons of salt.
Let sit for at least an hour.
Drain and rinse.



While still wet, roll in flour.
Place REAL butter in a pan and add the flour-coated flowers.
Fry until golden brown on each side.
I usually squash them with a spatula, which seems to help get them done all the way through and makes it crispier.




Add to bread and serve while hot! Salt and pepper to taste.
